After much deliberation on secondary fermentation and "dry hop" periods. I decided my work was complete. Jim and I cracked open a beer. The color is gorgeous. The aroma citrusy, and refreshing. This is a full beer. Not a session beer. Trust me you need all of those hops to calm the effects of its 9% alcohol content!

Jim and I are clearly biased. So say Wally? "Wow." "This is a really good beer." I think he said that because I had him over to watch "Night at the Museum" en el Teatro Calato. Free popcorn is a big draw. Just chew quietly or I'll leave.

Then Nigel followed up with this statement, "I'll see you on Wednesday to drink some more of that excellent ale." I may be on to something.

Rocco and Uncle Al will be at CalatOktoberfest and i will post their interpretation at that time.
